Packing Lunches
I had said awhile back that I was going to make a post on packing lunches, but I’m not sure I have a whole lot to say on the subject after all. I pack Jeff’s lunch 5 days a week - he’s the one who has to be at work at 8;30, when I don’t, and besides, he makes the coffee every morning. :) Lunch for him is generally either leftovers from the night before, or egg salad or peanut butter and jelly on homemade rolls. I add in some combination of a couple of oranges, a couple of bananas, banana bread with peanut butter, or cut up raw vegetables. Depending on what was leftover, he’s well fed for between two and three dollars a day, far cheaper than he could get that kind of food out. Even if you only pack your lunch a couple of days a week, you might save some substantial money over what you currently spend on lunches, if you’re out of the house at lunch time.
You don’t need a fancy lunchbox (though if you have the money and a fancy bag will motivate you to pack your lunch, go for it.) I just pack everything up in Rubbermaid containers that we can toss in our bags (the “disposable” Gladware stuff is cheaper, and fine for dry goods, but it will eventually crack or leak, usually at the worst time).
My two favorite lunch sites are Vegan Lunch Box and Lunch in a Box. Does anyone have any others?
